Healthy Ground Turkey Soup (Weeknight Easy!)

Keep dinner simple and healthy with a veggie-packed dinner Ground Turkey Soup. A delicious, comforting one-pot meal that’s delicious and comforting while also being SUPER HEALTHY. It’s made with ground turkey, whole chopped cauliflower and a big bunch of kale. Ready in 30 minutes!

You have to love food that gives off serious comfort food vibes while still being incredibly healthy. That was my goal in creating this healthy ground turkey soup recipe.

Ground turkey is a wonderful source of lean protein. Not only is it lower in fat and calories than beef, but its tenderness easily soaks up all the delicious flavors in this soup. Ground turkey soup is a favorite for weeknight dinners. It’s quick to throw together and most of the ingredients are common pantry staples. I usually have everything in the house except turkey, cauliflower and kale.

Ingredients for Ground Turkey Soup

  • Ground Turkey: I prefer to use dark meat turkey for the best flavor, or a combination of dark and white.
  • Aromatics: Shallots and garlic
  • Chicken soup: Use homemade or your favorite low-sodium chicken broth. My favorite is that Swansons not at all Pacific.
  • Tomato Puree: Use your favorite tomato puree
  • Cauliflower: Whole head, chopped (or 4-5 cups of cooked cauliflower)
  • Dried Spices: Basil, oregano and crushed red pepper flakes
  • Curly Kale: The whole group of Curly Kale giving you a good dose of high quality healthy dark leafy greens.
  • Toppings: Added virgin olive oil and grated parmesan cheese (For dairy-free, leave out parmesan or make vegan parmesan.

How to make Ground Turkey Soup

This super quick recipe requires 10 minutes of chopping, a few minutes of sautéing and 10 minutes of grilling. Ten minutes is enough time to make a delicious soup while keeping the vegetables bright and fresh.

  • To begin, make the cut shallots and garlic for a few minutes, until soft and shiny. Then add the ground turkey and cook, stirring, until it loses its pink color.

  • Add the sauce, tomato puree, chopped cauliflower and spices.
  • Simmer for 10 minutes.

  • Use an immersion blender to puree half to a third of the juice, depending on whether you want a smoother or chunkier texture. If you don’t have a blender, puree the soup in a food processor or blender and then return it to the pot.
  • Add the chopped kale and simmer the sauce for a few more minutes, until the kale is done and the sauce is hot.

  • Put the sauce in a bowl.
Ladle into a pot of ground turkey, kale, cauliflower soup with tomato sauce.

Drizzle each dish with a little olive oil and top with grated parmesan. Enjoy!

What to serve on the side

Although this clay soup is a good enough meal on its own, a a good green salad or this Italian Tricolor Salad it will be good together. There’s nothing like a green salad with a hot bowl of soup. The crusty bread on the side will be delicious, too.

  • 2 spoons extra virgin olive oil plus extra toppings
  • cup chopped shallots (2-3 large leaves)
  • 2 garlic cloves, finely chopped
  • 1 pound down turkey
  • 1 ½ spoons kosher salt
  • 46 cups low-sodium chicken broth
  • 2 cups tomato puree
  • 1 Medium cauliflower, leaves and stems removed, roughly chopped (See instructions for using roasted cauliflower.)
  • 2 spoons dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon of broken red pieces
  • 1 a bunch of old curled up, leaves pulled from thick stems and cut
  • Grated parmesan cheese for serving (see note for diary-free option)


Instructions

  1. Heat 2 tablespoons olive oil in a large pot or Dutch oven. Put the shallots on medium heat for 3-4 minutes, until soft. Add the garlic and cook for a minute longer. Add turkey and salt. Cook, stirring and tossing, until the turkey loses its pink color, 4 minutes or so.
  2. Add 4 cups of broth, tomato puree, cauliflower, basil, oregano and crushed red pepper. Bring to a boil, bring to a simmer and cook, uncovered, for 10 minutes.
  3. Use an immersion blender to cut 3 parts of the sauce, or less if you want a chunkier texture. If you don’t have a blender, puree the soup in a food processor or blender and return to the pot. Add more sauce if you want to thin the sauce.
  4. Add the shredded kale to the pot and heat the sauce for 2-3 minutes, stirring, until the kale is cooked and the sauce is hot.
  5. Put the sauce in a bowl. Drizzle with a little olive oil and top with grated parmesan.

Notes

  • Cauliflower Rice Substitute: Instead of chopping and chopping whole cauliflower, you can substitute 4-5 cups of roasted cauliflower.
  • For Dairy-Free: To make this recipe Dairy-Free, simply omit the grated parmesan topping or use a vegan parmesan substitute.
